Coconut Pecan Frosting

This is my mom's recipe, and it is fabulous, there is nothing better than homemade coconut pecan frosting, especially on top of a german chocolate cake.


1 C. Evaporated Milk
3 Egg Yolks
1 tsp. Vanilla
1 C. Chopped Pecans
1 C. Sugar
1/2 C. Butter or Margarine
1 1/2 C. Coconut

Combine all ingredients except for coconut and nuts. Cook over medium heat until thickened, about 12 minutes. Add coconut and nuts, beat until thick enough to spread.

Zucchini Whoopie Pie

I got this recipe from Real mom kitchen, and they are delicious! I must say that is has got my mind going in circles for other recipes I could use this same idea with. Pumpkin chocolate chip cookies sandwiched with a chocolate cream cheese frosting, or just plain cream cheese frosting. Yummy!!! My winter cookie months just got a little more exciting!!


2 cups plus 2 tablespoons all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 cup finely chopped nuts (optional, I didn't use)
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup vegetable shortening
1 large egg
1 cup grated zucchini-squeezed
1/2 cup milk
1 tsp. vanilla extract

1. Mix shortening and sugar. Add in egg. Mix. Add milk and mix.
2. Add in dry ingredients and stir.
3. Blend in the zucchini and vanilla.

Bake on a greased cookie sheet at 350* for about 12-15 minutes, until the bottom gets browned.
Cool and sandwich cookies with cream cheese filling.

Filling:
4 oz. cream cheese, softened
1/2 stick unsalted butter, softened
2 1/4 cups confectioners sugar
1/2 teaspoon pure vanilla extract
Scant 1/4 teaspoon salt

Beat all ingredients together until light and fluffy.

Snow Icing (for roof and yard)

I love how creamy and warm this is when it is first mixed, you will want to lick the bowl, beaters and anything else you can get your hands on! It is oh... so yummy... too bad you aren't eating your Gingerbread house!


6 egg whites – beat on high until stiff

In a Sauce pan combine:
¾ C. Water
3 C. White Sugar
1 ½ tsp. Cream of Tarter

Stir lightly, put lid on until sugar mixture boils really hard. Then take the lid off and boil to a soft ball stage. Then Pour the hot syrup in a steady stream into the egg white while the mixer beats on high. Continue beating on high for 4-5 minutes.

** Do not attempt to do more than a single batch of this icing as it will fill your mixer to the brim with a single batch! **

Royal Icing


Beat 3 egg whites until foamy
Add ½ tsp. cream of tarter
Mix in 1 lb of Powdered Sugar using dough hooks (you can use whips).

Mix until spreading consistency or firm to hold shape.

"Granny B's" Sugar Cookies

Thanks to Laura at Real Mom Cooking for this recipe, and I'm not gonna lie to you, these really do taste like those "Granny B's" big pink frosted cookies you know you have all tried. Yummy! My mouth is watering already!



1 cup butter
1 cup sugar
2 eggs
1/2 teaspoon vanilla
3 cups of flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup sour cream


Cream Butter and sugar together, then slowly add eggs, and Vanilla. Sift dry ingredients together, then add dry mixture to the wet mixture along with the sour cream, mix until smooth.

Chill: 2 to 3 hours

roll out to 1/4 - 1/3 " thick depending on your preference and cut into shapes
bake at 375 degrees for 6 to 8 minutes or until golden brown on bottom and let cool.


Butter Frosting

4 Tablespoons butter
2 1/3 cup powdered sugar
milk
3/4 teaspoon vanilla
for chocolate frosting add 3 Tablespoons cocoa

Put butter in bowl and beat with electric mixer until fluffy. Then add about half the powdered sugar. Then beat in 1 Tablespoon milk and the vanilla. Slowly add in the rest of the powdered sugar. Add more milk if needed. Add food coloring if desired. The makes enough frosting to ice half of a cake mix, so I usually double the recipe.
