Creme Brulee French Toast



Creme Brulee French Toast

1/2 cup butter
1 cup brown sugar
2 TBSP corn syrup
1 loaf of Texas toast (thick sliced bread)
5 eggs
1 1/2 cups half and half cream
1/4 tsp salt
1 tsp vanilla

in a small saucepan melt butter, brown sugar, and corn syrup over medium heat until smooth, stirring occasionally. Pour mixture into large, greased jelly roll pan (cookie sheet) Spread to cover completely. Place 12 slices Texas toast bread in a single layer to cover pan. mix together eggs, cream, salt, and vanilla. Spoon mixture over each piece of bread. Cover and refrigerate overnight. Bake uncovered at 350 degrees for about 30 minutes. remove from the pan and serve. If not serving immediately, turn each slice over( this will prevent bread from sticking to the bottom of the pan.)

Creme Brulee syrup

1/2 cup of butter
1 cup buttermilk
1 cup sugar
2 TBSP white corn syrup

boil together over medium heat for 7-10 Minutes stirring constantly

after you remove from the heat
add:
1 tsp vanilla
1/2 tsp baking soda

O' Henry Bars


O' Henry Bars

1 cup of sugar
1 cup of light corn syrup
1 cup of peanut butter
3 cups Rice Crispies
1 cup of chocolate chips
1 cup of butterscotch chips

Grease 9x13 pan

Combine sugar and corn syrup over heat. Bring to a boil- until frothy. Add peanut butter, mix well. Add Rice Crispies. Spread evenly in pan.

Microwave chocolate and butterscotch chips together in bowl for 1 minute. Stir. Microwave for 30 seconds longer. Stir again. Spread over Rice Crispies in pan. Refrigerate for 20 minutes to set frosting.

Malasadas

These are like little donuts. they are very good, and very popular in Hawaii. This is the quick way of doing them. Normally you would make a yeast dough to fry, but by using the bread and bisquick you save time, and they taste the same. They are like eating little homemade donuts if you have ever had those! Delicious and very quick!

2 cups Bisquick

1 egg

1 cup milk

Cut slices of bread in 4's .

Dip in batter and deep fry.

Roll in sugar

Tortillas

I can't take credit for the great recipe, it's Kevin's aunt's. But homemade tortillas are so much better than store bought. I once had a roommate who use to make tortillas for us on a weekly basis, and they were so good! Hope you enjoy this recipe as much as I have.


4 cups flour

1 tsp salt

1 tsp baking powder

1 to 1 ½ cup hot water

1/4 cup shortening

Mix dry ingredients. Cut in shortening add water. Break into small

balls and roll into thin circles. Cook on flat griddle or fry pan until

cooked on both sides. Cover with a dishtowel once cooked to keep soft.

Whole Wheat Waffles



1 C. Whole Wheat flour
1/4 tsp. Salt
2 rounded tsp. Baking Powder
1 C. Milk
1/4 C. Oil
2 Eggs

Beat mixture together until there are no lumps. Then cook in a hot waffle Iron. Serve with Butter and Syrup, or Fresh Fruit and whipped cream.

Shrimp and Chicken Etouffee

This is one of David's favorite meals of all time (he ate it growing up). It is a Creole dish-hailing from southern Louisiana- which is thicker than gumbo. In French, etouffee means to "smother." Pronounced, I think, eh-two-fay.

2 cans diced tomatoes with jalepenos
2 cans cream of mushroom soup
2 cloves garlic, minced
2 green peppers, chopped
2 yellow onions, chopped
2 large bunches green onions, chopped
1 stick butter
2 (8 oz.) cans tomato sauce
2 lbs. shrimp, shelled
1-2 chicken breast, cooked and cut into bite sized pieces

Saute onions, peppers, and green onions in butter. Add garlic. Cook for a couple more minutes. Add all canned items and simmer for 30-45 min. Add chicken and shrimp and cook for about 3-5 minutes or until shrimp is cooked through. Serve over rice.

(It tastes better the next day. We like to add more jalepenos and cayenne pepper to give it more kick. If you don't like spicy, use regular diced tomatoes. )

Coconut-Pineapple Cream Cake

My family would always make this cake for our Polynesian luaus. It's a great summer dessert because it is pretty light on the palate and easy to make.

1 pkg. vanilla cake mix
1 pkg. (8 oz.) cream cheese, softened
1 c. milk
1 pkg. (3 3/4 oz.) instant vanilla pudding
1 can (20 oz.) crushed pineapple, drained
1 (12 oz.) cool whip
1 c. shredded coconut

Preheat oven to 350. Grease and flour a jelly roll pan. Prepare cake mix as directed on the pkg. Pour into pan and bake for 15-20 min. Cool completely.
Mix cream cheese, milk, and pudding until thick. Spread over cake. Spread pineapple over pudding mixture then cover with cool whip. Sprinkle with coconut. Chill before serving.

(You can add/switch different fruits. I like to put bananas on top or below of the pineapple layer. I've tried using canned peaches (cut into thinner slices) instead of pineapple with no coconut, strawberries and bananas, stawberries and peaches... the options are endless and they all taste great.)

Donnette's Rolls/Breadsticks

For those non-bakers, this is one of the easiest roll recipe's that I have ever come across. It's simple and fairly quick as far as roll dough goes. It makes great breadsticks, rolls, and just about anything else you can think of to use it for. Thanks for sharing it with me Donnette.


2 C. Warm Wate
2 Tbsp. Yeast
1/2 C. Sugar

Mix and let sit for 5- 10 minutes until yeast starts to foam

then add:
2 1/2 tsp. Salt
3 C. Flour

Mix well then add:
1 Egg
1/4 C. Oil

Mix together then add:
3 C. flour (1 C. at a time)

Mix together until dough is formed. Do not add too much flour or dough will be stiff. It is better for dough to be a little sticky. Let dough raise for 1/2 hour. Make it into desired shape i.e. rolls, breadsticks, etc. Then allow it to rise for 20 minutes more. Bake at 400 for 12-15 minutes or until golden brown. Once out of oven brush with butter while warm.

BreadSticks

Use the Roll dough
1 Stick margarine melted
Parmesean Cheese
McCormicks Salad Supreme Seasoning mix
Garlic Salt
Parsley Flakes


Roll dough out into a large rectangle about 1/2 inch thick. Then Cut into strips with a pizza cutter. Then take each strip and dip it into butter and seasoning and lay it on a pan, make sure both sides of the beardstick are coated with seasoning. You can just lay the margarine and seasonings in the pan you are going to cook the breadsticks in and then roll them in the seasonings as you lay them out in the pan. Allow them to rise for 10 minutes, then Cook at 400 for 12-15 minutes.

Crock Pot Chicken Taco's

This recipe is so easy, and is way yummy, I hope that you all enjoy it as much as I do!


2 Cans Black Beans
1 Can Corn
2 Chicken breasts shredded
1 C. Salsa

Place all ingredients in a crock pot and cook on low for 3 hours
Then serve with Tortillas, and your favorite Taco toppings (i.e. sour cream, cheese, lettuce, tomatoes, and salsa) .

Creamy Chicken


We had this dish while we were staying with Kevin's Aunt in Hawaii, and it was so good and super easy, so I had to post it for everyone else to enjoy!


2-3 Chicken breasts
2-3 Cans Cream of mushroom or Chicken Soup
1 Pkg Dry Good Season Italion Dressing Mix

Cook in Crock Post for at least 3 hours on high
Just before serving stir in

1 Pkg of Cream Cheese

Make sure to mix until Smooth
Use Milk to thin out until desired consistency is obtained.
Serve over rice or noodles.

To change things up, you can add some fresh mushrooms to the mixture, or you can cube or strip and brown the chicken before adding it to the crockpot.

Pumpkin Waffles



2 C. Flour
1 Tbsp Cinnamon
1/2 tsp. Nutmeg
1 1/2 C. Milk
3/4 C. Melted Margarine
2 Tbsp. Baking Powder
1 Tbsp. Sugar
1/4 tsp. Salt
1 C. Pumpkin
1 Tbsp. Vanilla

Combine dry ingredients and stir together.
Combine wet ingredients and mix together.
Add wet and dry ingredients together and mix just until combined.
Cook in a hot waffle iron. Serve with Butter and Carmel Syrup.

If you are sunnin short on time, you can add 1 can pumpkin to pre-made waffle mix, along with cinnamon and nutmeg. It isn't quite as good, but you get the same general effect.

Crepes



2 Eggs
2 C. Milk
1 1/2 C. Flour
Pinch of Salt
2 tsp. Sugar
2 tsp. Vanilla
2 Tbsp. Melted Butter

Mix all ingredients together in a blender or a bowl. Pour a small amount of batter into a hot non-stick frying pan and swirl the batter around by tipping the pan to make the batter spread into a large thin circle that coats the pan thinly. Then place over the heat on the stove and cook on both sides. Serve with your favorite toppings ( Syrup, butter and powdered Sugar, Fresh fruit and whipped cream, Nutella - Chocolate) roll them up and enjoy.
